We recommend using a low, wide pan filled with 2 quarts of water, 1 Tbsp salt and 2 Tbsp olive oil.
For best results, parboil the noodles in small batches, being careful to keep them moving to ensure the noodles don't get stuck together; alternatively, you can parboil the noodles one at a time while preparing the rest of your meal.
Remove the parboiled pasta from the boiling water, then immerse it in ice water to stop the cooking.
Drain the noodles and lay them out flat on clean kitchen towels to prevent the pasta from sticking together.
